    Relae   This new restaurant in residential Nørrebro, opened by Christian Puglisi and Kim Rossen, lit the world gastronomic scene abuzz given chef Puglisi’s experience at elBulli (Spain), Taillevent (France), and Noma (Denmark). Add that cross-cultural, world-class pedigree to an Italian upbringing (Puglisi can’t do without his olive oil, tomato, or lemon) and you have a truly singular, globally-inspired sophistication that helps explain the extraordinary quality of the food. More than anything, Ralae channels this pedigree into a novel gastronomic concept: “a no-nonsense fine dining experience with high quality but non-luxurious products” (high-grade and immaculately sourced) that tries to bring guests close to the kitchen in a fast, dynamic atmosphere.     Fiskebaren   With a young and talented team of chefs (including a few ex-Noma guys in the mix), Copenhagen's ultra-cool Kødbyens Fiskebar brings the spirit of Noma’s light, fresh and flavoursome Nordic cuisine to a more casual setting. Located in the hip & edgy Meatpacking District, this is the place to come for some of the finest and most affordable seafood in town, which is delivered straight to the kitchen from the fishermen’s boats nearby. The fresh Fish Bar is all about raw fish and shellfish, while the restaurant’s main kitchen produces creations such as a sumptuous potted shrimps with cucumber gel and smoked cheese. The decor is minimalist-butcher-shop-cool, and as the night wears on the restaurant morphs into a happening late-night party spot where expertly crafted cocktails are the pick of the drinks menu.

    Pate Pate   Formerly a liver paté factory, this winebar/restaurant in Copenhagen’s edgy and booming Meatpacking district slow-cooks hearty fare with Spanish, French and Moroccan influences. Owned by Copenhagen bar- and cafe-veterans Dan and Kenn Husted, this warm restaurant features a lively sidewalk scene and has been rewarded with a loyal neighborhood following. The clean interior with rustic wooden tables and chairs is all white and shades of brown. Fresh ingredients, small-name breweries, and an extensive wine list drive this establishment, whose menu of country tapas is tweaked daily. On weekends, Paté Paté particularly shines with a young, hip late-night crowd looking for tasty snacks and great wine. This is the perfect spot to drop into for any type of occasion, be it for a long indulgent meal, a light snack or a fantastic glass of wine.
