As one of the most beautiful rooftop pool bars we've ever seen, the Gansevoort Hotel's 18th floor Plunge Bar deftly combines sparkling views of the Atlantic, potent cocktails, and a 110-foot adults-only swimming pool. You'll find South Beach's scantily-clad young things lounging during the day & partying all-night by the cool granite bar. Following the success of the Gansevoort's Group first design hotel in New York, their latest Miami venture captures the quintessential Miami essence of playfulness and fun. The pool is reserved for hotel guests until after 8 pm, except on certain Saturdays, but lounging on white sofas with a signature Pink Elephant cocktail is one of our favorite warm-weather activities at any time of day or night. Drinks are predictably expensive but delectable, and service is professional – not to mention, when you can get in, the pool is free. Look out for the lobby aquarium on your way in through the hotel.
