Specialising in gin-based cocktails, experiment with The Poet’s Dream with gin and vermouth; the Eagle’s Dream with egg white, violet and lemon; or sample a Gin Fix with gin, pomegranate grenadine and a mountain of crushed ice. Other highlights include the Remember the Maine with rye whiskey, vermouth, Cherry Heering and absinthe; and the signature Palma Fizz with vodka, lime juice, ginger syrup, rose water and club soda. Although the drinks may take some time to be prepared, it’s well worth the wait. $$
