The inventive contemporary French menu is light and refreshing yet rich in flavour, and brings together culinary influences from regions all over France. Signature dishes include the lobster carpaccio with Aquitaine caviar, nori seaweed and Yuzu blanc manger; and a Bresse chicken casserole with aromatic verbena, fondant charlottes and poivrade artichokes in coconut sauce. While the price tag is exorbitant, as one of Hong Kong’s best fine dining experiences it is well worth the indulgent price tag.
