This recently opened restaurant in residential Nørrebro, opened by chef Christian Puglisi and Kim Rossen, has lit the world gastronomic scene abuzz given Puglisi’s experience at the world’s best restaurants, including elBulli (Spain), Taillevent (France) and Noma (Denmark) to name a few. Relae channels its cross-cultural, world-class pedigree into a novel gastronomic concept: “a no-nonsense fine dining experience with high quality but non-luxurious products” that includes immaculately sourced ingredients, trying to bring guests closer to the kitchen in a fast, dynamic atmosphere. Relae cuts through the excesses of gourmet dining by creating a casual, boisterous and fun atmosphere where any stiff formality has been removed entirely. Sometimes with the help of subtle molecular gastronomy, menu items accentuate the essence and texture of the fresh and seasonal produce, and are restricted to three or four ingredients maximum. Expect superb dishes such as his signature vinegar-pickled mackerel with cold cauliflower and lemon purées, or, from the vegetarian menu, the poached celery, pickled seaweed and Taggiasche olives. At only €45 for one of the most talked-about four-course meals in town, the price is an absolute steal and the dining experience is one of Copenhagen’s best.
